Healthy Bell Pepper Nachos

Today we’re cooking up some healthy nachos! Or, healthier nachos if you want to get technical. (I’ll add a few more substitutes to this one to help you make it as healthy as possible.) This recipe is perfect for those days when you’re craving junk food, but don’t want all the junk. I got a little creative and decided to swap out the dairy and the tortilla chips with Daiya’s vegan non-dairy cheese and mini sweet bell pepper cups. I’m all about healthier options, but don’t let that fool you, these nachos are still super tasty! The best part? You don’t have to feel guilty if you accidentally eat the whole tray.

Ingredients:

  • Sweet bell peppers

  • Organic ground beef

  • 1 can Bush’s Black Bean Fiesta

  • Daiya Cheddar Style Shreds

  • Diced jalapeños

  • 1 medium avocado

  • Salt

  • Pepper

  • Onion powder

  • Chili powder

  • Garlic powder

Before we get started, let’s talk cheese. Daiya’s non-dairy cheddar style shreds work great as a cheese replacement because it tastes pretty close to the real thing and it melts to a similar consistency. If you’re craving cheese, but can’t do dairy, it’s a great option. However, if you prefer to stay low-carb, then you’ll want to swap out the Daiya cheese with real shredded cheese. Daiya’s substitute is not loaded with carbs, but real cheese does contain fewer net carbs. For all other non-carb-counters who simply want to avoid dairy like myself, then Daiya’s cheddar style cheese is the way to go.

While your meat cooks, you can prep your bell pepper cups. I simply chop off the stem, remove the seeds, and slice them in half.
